Description
The grapes for this wine are from two different blocks on the farm. One is a ten year old bush vine block and the other one a small block of trellised vines. We do not use any irrigation on the farm and everything is farmed organically. Yields are naturally kept low, around 4 tons per hectare. Harvesting nearly every year is the first week of February. We pick everything by hand and it is immediately moved to the winery for destemming and crushing. Everything is hand sorted using a "vibrating" table before crushing. Fermentation is done in open top five-ton stainless steel tanks. Extractions are done manually and we try to do about 20 per day. Skin contact lasts ± 2-3 days before pressing is done. At around 5 balling, we press. We allow fermentation temperatures to go up to 30 degrees. End of fermentation is in tank and we rack for the first time after alcoholic fermentation is finished. MLF is done in tank and inoculated. This wine was filtered before it went to barrel and again before bottling. 5 Cabenet Sauvignon was added to add to the mouth feel. For the first time we used only Francois Fréres barrels (30% new wood) to enhance a more Burgundy style. We very much are looking for more Burgundy flavours. The wine is lighter in colour, but is blessed with beautiful sour cherry, forest floor and red berry flavours. Medium bodied, with good harmonious tannins to improve during the next 5-7 years.
