2010 White Ladybird Chardonnay Wine

This is a new wine in our portfolio. We do believe that Chardonnay can produce above average wine in our area. Planted in 1992 this is the oldest vineyard block on the farm. It is also our first certified organic white block on the farm. Like all good loyal Laibach followers would know we farm organically. We also do not use any irrigation on the farm and believe in producing naturally hand grown grapes. We believe to produce world class, site specific wines you should not try to manipulate too much, rather let "terroir" speak. The winemaking borders to the extreme, as well with very much old style charm getting a front seat view. All our grapes are handpicked. Early morning start, usually around 6 am to get cool grapes to the winery. We use whole bunch pressing, no destemming. No mashcooler and no settling. We use no inoculation of commercial yeast and allow fermentation temperatures to go above 20?C. We use no sulfur and allow the juice to oxidize as much as it would like. We ferment around 10 of our juice in older 500 li Hungarian oak barrels. The wine underwent 100% malolactic fermentation and was left on the gross sediment for 12 months before bottling. Small amounts of sulfur are added just before bottling. The wine is sterile filtered and bottled under screw cap. We are looking for elegance and mouth feel in this wine. Therefore no extreme alcohol levels or excessive acid. Lovely aromas with hints of pear, some yellow apple and lime. Beautiful, integrated wood with only some toast. Medium bodied palate with a mouthwatering aftertaste. Very enjoyable on its own, but with enough characteristic and charm to be enjoyed with food. Drink now, but with enough credentials to last 3 years from vintage.
